The "Super Bro's" Valentino and Giuseppe Mazzella, owners of the hottest pizzeria in Frankfurt, explain the new pizza hype
For us, the real pizza is of course the Neapolitan one. It has a very thin base. It would collapse in the middle if you picked it up without a board. But we're not pizza judges. We love all types of pizza. Anyone who is passionate about making pizza deserves our respect. Like Pizzeria Marinella, a small store that knows its trade. And we see more and more people even buying small pizza ovens and trying to make good pizza at home.
A new hype has arisen around pizza. Which flour, which tomatoes, where does the sauce come from, what else do you put on it... These questions didn't interest most people just a few years ago. Today, wholesalers and market halls such as Venos in Rödelheim have adapted to this new demand. Metro even sells Caputo flour from Italy.
Only a few years ago, People used to go to an Italian restaurant, and chose from an often very long menu and order. When we opened our store in 2017, we wanted to do things differently. There were ten Neapolitan pizzas, Aperol Spritz, loud hip-hop music and a good mood. Maybe because we're family - our cousins are also part of Super Bro's.
Over time, more and more guests came to Nordend, including celebrities such as Kevin Trapp and the rapper Nemo. But the secret of a good pizza is also high-quality ingredients. San Marzano tomatoes, fior di latte, salsiccia from Calabria. Some years back those where hard to get.
Nowadays people want to know what's on their pizza, what they are eating. We like to go to Chinaski's day bar, where it's all about healthy food and good wine. Or Brixia, an Italian pasticceria where connoisseurs are at work. Their small pastries are the perfect sweet accompaniment to pizza.
